Albondigas Soup

A hearty, flavorful soup full of tender meatballs and vibrant veggies, perfect for chilly nights and family gatherings.

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup uncooked rice
  • 1 egg
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped

Instructions

  1. Prep your ingredients by washing and chopping all your vegetables.
  2. Mix the meatball ingredients in a large bowl until well-combined.
  3. Form the mixture into 1-inch meatballs and place them on a baking sheet.
  4. Sear the meatballs in a large pot over medium heat for about 3-4 minutes until browned.
  5. Sauté the chopped onion and minced garlic in the same pot for 2-3 minutes until translucent.
  6. Add the diced carrot and zucchini, stirring for another 3-4 minutes.
  7. Simmer the soup by pouring in the beef broth and adding the diced tomatoes.
  8. Cook until the soup simmers gently, then add in the seared meatballs and green beans.
  9. Let the soup simmer for another 25-30 minutes until flavors meld.
  10. Taste and adjust seasoning before serving.

Notes
