Apple Walnut Chicken Salad

A delightful twist on a classic chicken salad featuring the sweetness of apples and the crunch of walnuts, all brought together with a creamy dressing.

Ingredients

Scale
  • 2 cups cooked chicken breast, shredded
  • 2 crisp apples (Granny Smith or Honeycrisp), diced
  • 1/2 cup walnuts, toasted
  • 1 cup celery, finely chopped
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep the chicken: Boil or grill the chicken until fully cooked, about 15-20 minutes. Shred or chop into bite-sized pieces if using leftover chicken.
  2. Chop the apples: Core and dice the apples into small cubes, tossing them in lemon juice to prevent browning.
  3. Prepare the celery: Rinse and finely chop the celery to match the size of the chicken and apples.
  4. Toast the walnuts: In a dry skillet over medium heat, toast the walnuts for about 5 minutes until fragrant.
  5. Make the dressing: In a bowl, combine mayonnaise with lemon juice, salt, and pepper. Adjust to taste.
  6. Combine the ingredients: Add chicken, apples, celery, and walnuts to the bowl with the dressing and gently fold the mixture.
  7. Taste and adjust: Sample the salad and add more seasoning if needed.
  8. Serve: Plate the salad on greens or in a sandwich and garnish as desired.
