Harvest Couscous Salad

A colorful and nutritious salad celebrating seasonal ingredients, perfect for any gathering.

Ingredients

  • Couscous
  • Dried Cranberries
  • Pecans
  • Spinach
  • Olive Oil
  • Balsamic Vinegar
  • Lemon Juice

Instructions

  1. Cook the Couscous: Bring a pot of water to a boil, using 1.5 cups of water for every cup of couscous. Stir in the couscous, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.
  2. Prep the Add-Ins: Chop the spinach and roughly chop the pecans. Toast the pecans in a dry skillet over medium heat for 4-5 minutes.
  3. Mix It Up: In a large bowl, combine fluffed couscous, chopped spinach, cranberries, and toasted pecans. Optionally add diced apples or feta cheese.
  4. Dressing Time: Drizzle olive oil and balsamic vinegar over the salad. Squeeze in lemon juice and toss gently until well combined.
  5. Chill and Serve: Let the salad chill in the fridge for at least 30 minutes before serving. Adjust seasoning with salt and pepper if needed.

Notes

For variety, feel free to add different fruits, nuts or proteins. Make ahead of time and dress right before serving.
