  • 3 fresh, very ripe peaches (halved and pitted)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons pure maple syrup (or honey)
  • 1 tablespoon vegetable broth
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon coconut sugar (or light brown sugar)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • Vanilla ice cream, Greek yogurt, or heavy cream (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the peaches by slicing each in half and removing the pit.
  3. Make the glaze by whisking olive oil, maple syrup, vegetable broth, apple cider vinegar, coconut sugar, vanilla extract, cinnamon, and salt.
  4. Arrange the peach halves cut side up in a baking dish and drizzle with the glaze.
  5. Bake for about 25-30 minutes, checking for softness at 20 minutes.
  6. Serve with your favorite topping like ice cream or yogurt, and drizzle with remaining glaze.
