  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pork-free, alcohol-free barbecue sauce
  • 8 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup canned corn, drained
  • 1/2 cup diced red onion
  • 1 cup shredded cheddar cheese

Instructions

  1. Prep the chicken by preheating your grill or skillet over medium heat. Drizzle olive oil over chicken breasts and sprinkle with smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Cook the chicken on the grill or skillet for about 6-7 minutes on each side until the internal temperature reads 165°F (75°C).
  3. Let the chicken rest for 5 minutes.
  4. Slice the chicken into thin strips.
  5. Mix together the chopped romaine, cherry tomatoes, corn, and red onion in a large bowl.
  6. Add the sliced chicken and barbecue sauce, tossing gently to coat.
  7. Finish by sprinkling shredded cheddar on top.
  8. Serve!
