BBQ Chicken Salad

A flavorful BBQ Chicken Salad that combines smoky barbecued chicken with fresh greens, crunchy corn chips, and zesty ranch dressing.

  • 1 lb Chicken Thighs
  • 1/2 cup Barbecue Sauce
  • 1 cup Corn Chips
  • 1 cup Corn Kernels (fresh or frozen)
  • 1/2 cup Ranch Dressing
  • 4 cups Lettuce or Mixed Greens
  • 1 cup Cherry Tomatoes, halved
  • 1/4 cup Red Onion, sliced

Instructions

  1. Grill the chicken by preheating your grill over medium heat. Season with salt and pepper, and grill for 6-8 minutes per side, brushing with barbecue sauce in the last minutes.
  2. Prepare the salad base by chopping lettuce and adding it to a large bowl.
  3. Add the sliced cherry tomatoes and corn kernels to the salad.
  4. Slice the grilled chicken into bite-sized pieces and combine with the salad mixture.
  5. Drizzle ranch dressing over the salad and toss until evenly coated.
  6. Top with corn chips for added crunch.
