  • 3/4 cup granulated sugar (150g)

  • 1/2 cup unsalted butter, melted (115g)
  • 3/4 cup milk (180ml)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 to 1 1/2 cups fresh strawberries, diced (150-225g)
  • Optional: coarse sugar for sprinkling on top

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix dry ingredients in a mixing bowl.
  3. Combine wet ingredients in another bowl.
  4. Pour the wet mixture into the dry ingredients and fold gently.
  5. Add the diced strawberries and fold carefully.
  6. Scoop the batter into muffin cups.
  7. Bake for about 18-22 minutes.
  8. Cool the muffins on a rack for 5 minutes.
