Blackberry Pistachio Dream Bars

Delicious homemade dream bars combining tart blackberries and rich pistachios, inspired by nostalgic summer memories.

  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1/4 cup Granulated Sugar
  • 1/4 teaspoon Salt
  • 1 large Egg Yolk
  • 24 tablespoons Ice Water
  • 2 cups Fresh Blackberries (or raspberries/blueberries)
  • 1/2 cup Granulated Sugar (adjust as necessary)
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Cornstarch
  • 1/2 cup Light Brown Sugar (or granulated sugar)
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine flour, sugar, and salt in a large bowl.
  3. Cut in the cold, cubed butter until it resembles coarse crumbs.
  4. Add the egg yolk and gradually mix in ice water until the dough holds together.
  5. Press the dough into a greased 9×9-inch baking pan and refrigerate.
  6. Cook blackberries, sugar, lemon juice, and cornstarch in a saucepan over medium heat for 5-7 minutes.
  7. Remove from heat and let it cool.
  8. Whisk together brown sugar and baking powder, then add cold butter until it resembles coarse crumbs.
  9. Add the egg and vanilla extract; mix until just combined.
  10. Fold in the pistachios.
  11. Assemble the layers with blackberry mixture on the crust, then pour the pistachio mixture on top.
  12. Bake for 30-35 minutes until golden.
  13. Cool for 30 minutes before slicing.

Notes

For a vegan version, use coconut oil and a flax egg. These bars can also be made gluten-free with suitable flour.
