Easy Blueberry Cream Cheese Bread

Soft, moist bread filled with blueberries and a rich cream cheese layer.

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk (or buttermilk)
  • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for cream cheese layer)
  • 1 large egg (for cream cheese filling)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Pan: Lightly grease a loaf pan and line with parchment paper.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cream the Butter and Sugar: Beat butter and sugar together until light and fluffy.
  5. Add Eggs and Vanilla: Mix in eggs one at a time, then stir in vanilla extract.
  6. Incorporate Dry Ingredients: Gradually add dry ingredients to the wet mixture, alternating with milk.
  7. Fold in Blueberries: Gently fold in the blueberries tossed in flour.
  8. Prepare the Cream Cheese Mixture: Combine cream cheese, sugar, and egg until smooth.
  9. Layer in the Loaf Pan: Spread half of the blueberry batter, add cream cheese mixture, then top with remaining batter.
  10. Bake: Bake for 55-60 minutes until a toothpick comes out clean.
  11. Cool and Slice: Allow the bread to cool in the pan before transferring to a wire rack.

Notes

Slice and serve warm or at room temperature. Excellent with a smear of butter or honey.
