Cherry Almond Pound Cake

A delightful pound cake infused with cherries and almond, perfect for gatherings or a cozy brunch.

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon almond extract
  • 1 cup milk
  • 2 cups fresh cherries, pitted and halved

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a bundt or loaf pan.
  3. Cream the butter and sugar until fluffy.
  4. Add eggs one at a time, fully incorporating each.
  5. Mix in almond extract.
  6. Combine dry ingredients in another bowl.
  7. Alternate adding dry and wet ingredients, starting and ending with flour.
  8. Fold in cherries gently.
  9. Pour batter into the prepared pan.
  10. Bake for 55-65 minutes until a toothpick comes out clean.
  11. Cool in the pan, then transfer to a wire rack.
