Dollywood Cinnamon Bread

Soft and pillowy slices of cinnamon-infused goodness slathered in a sweet glaze, perfect for cozy mornings.

  • 2.25 cups all-purpose flour, sifted
  • 0.25 cup granulated sugar
  • 2.25 tsp instant yeast
  • 0.5 tsp salt
  • 0.5 cup warm milk (110°F)
  • 0.25 cup melted butter
  • 1 large egg
  • 0.5 cup brown sugar
  • 2 tbsp ground cinnamon
  • 3 tbsp softened butter
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 0.5 tsp vanilla extract

Instructions

  1. Activate the Yeast: In a small bowl, combine warm milk and sugar, stirring until dissolved. Sprinkle your instant yeast on top and let it sit for about 5-10 minutes, until frothy.
  2. Make the Dough: In a large mixing bowl, whisk together 2 cups of sifted flour and salt. Pour in the melted butter, the egg, and the frothy yeast mixture. Mix until combined, then add the remaining flour gradually, kneading the dough until smooth and elastic (about 5-7 minutes).
  3. First Rise: Transfer your dough to a greased bowl, cover it loosely with a kitchen towel, and let it rise in a warm place until it doubles in size (about 1 hour).
  4. Prepare the Filling: Mix together brown sugar and ground cinnamon in a bowl and set aside.
  5. Shape the Dough: Once risen, punch down gently. Roll the dough into a rectangle, about 1/2 inch thick. Spread softened butter over the dough surface.
  6. Sprinkle & Roll: Sprinkle the cinnamon-sugar mixture evenly across the buttered surface. Roll the dough tightly from one long side.
  7. Slice and Second Rise: Pinch the edges to seal and slice into about 12 pieces. Place them cut-side up in a greased baking dish, cover again, and let rise for another 30-45 minutes.
  8. Bake: Preheat your oven to 350°F. Bake for 25-30 minutes or until golden brown.
  9. Prepare the Glaze: Whisk together powdered sugar, milk, and vanilla extract; adjust consistency with milk.
  10. Glaze the Bread: Once out of the oven, drizzle the glaze generously over the warm cinnamon bread.

Notes

Serve warm, pairs wonderfully with coffee or tea. Can be stored in an airtight container for up to 3 days.
