  • 1 cup pumpkin puree
  • 1 cup water
  • 2.5 cups bread flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt

Instructions

  1. Get the Starter Ready: Make sure your active sourdough starter is bubbly and vibrant.
  2. Mix the Ingredients: In a large mixing bowl, combine the sourdough starter, pumpkin puree, and water. Stir until well combined.
  3. Add the Dry Ingredients: Add bread flour, pumpkin pie spice, and salt. Incorporate until a sticky dough forms.
  4. Knead It Out: Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth.
  5. First Rise: Place the dough into a lightly oiled bowl, cover, and let it rise for 4-6 hours.
  6. Shape the Loaf: Gently deflate the dough and shape it into a loaf. Place it in a proofing basket or on a baking sheet.
  7. Final Rise: Let the dough proof for another 30-45 minutes as you preheat your oven to 450°F (230°C).
  8. Score and Bake: Slash the loaf’s top and bake for 30-35 minutes until golden-brown and sounds hollow.
  9. Cool and Slice: Let the bread cool on a wire rack before slicing.

Notes
