Soft and Chewy Strawberry Sugar Cookies

Delicious and soft cookies with the tangy sweetness of fresh strawberries, perfect for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, diced
  • 1/4 cup powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy—about 3-5 minutes.
  3. Add the eggs and vanilla extract, mixing until just combined.
  4. Combine flour, baking soda, baking powder, and salt in a separate bowl.
  5. Spoon the dry ingredients into the wet mixture slowly until just combined.
  6. Fold in the diced strawberries carefully to avoid mashing them.
  7. Scoop dollops of dough onto a parchment-lined baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes until edges are set and tops look slightly puffy.
  9. Cool on the baking sheet for 5 minutes before transferring to wire racks.
  10. Dust with powdered sugar if desired after completely cooled.
