Strawberry Cheesecake Cookies

Delightful cookies combining the flavors of fresh strawberries and creamy cheesecake in a portable treat.

  • 85g Cream Cheese (full-fat)
  • 15g Sugar (for Cheesecake Filling)
  • 50g Fresh Strawberries, diced
  • 15g Sugar (for Strawberry Compote)
  • 115g Butter, softened
  • 90g Sugar (for Cookie Dough)
  • 1 Egg Yolk
  • 130g All-Purpose Flour
  • 1 tsp Vanilla Extract
  • 1/4 tsp Baking Powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the Strawberry Compote by cooking diced strawberries with 15g sugar over medium heat for 5-7 minutes. Set aside to cool.
  3. Cream together your butter and 90g sugar until fluffy, about 2-3 minutes.
  4. Incorporate the egg yolk and 1 tsp vanilla until fully mixed.
  5. Mix in the dry ingredients: 130g flour and 1/4 tsp baking powder.
  6. Fold in the diced strawberries.
  7. Shape the cookies into small balls and place on a lined baking sheet.
  8. Prepare cheesecake filling by mixing 85g cream cheese and 15g sugar until smooth.
  9. Add a dollop of filling into the indentation of each cookie dough ball.
  10. Bake for 12-15 minutes until edges are golden.
  11. Cool for 5 minutes before transferring to a wire rack.

Notes

Serve with fresh mint leaves or pair with a scoop of vanilla ice cream for an extra treat.
