Strawberry Layer Cake

A fluffy and delicious Strawberry Layer Cake topped with creamy frosting, perfect for any celebration.

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh strawberries, pureed
  • 1 cup unsalted butter (for frosting), softened
  • 4 cups powdered sugar
  • 1/4 cup fresh strawberries, finely chopped
  • 1 tablespoon milk (if needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cake pans by greasing and flouring two 9-inch round cake pans.
  3. Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  6. Alternate adding dry and wet ingredients, starting and ending with the dry ingredients.
  7. Incorporate the fresh strawberry puree gently into the batter.
  8. Pour the batter evenly into the prepared cake pans.
  9. Bake for 25-30 minutes, or until a toothpick comes out clean.
  10. Cool the cakes in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  11. Prepare frosting by beating the softened butter and gradually mixing in powdered sugar and chopped strawberries.
  12. Frost the cakes once completely cool, layering and topping with the frosting as desired.

Notes

For a stunning presentation, garnish with fresh strawberries on top and a sprinkle of powdered sugar.
