Vanilla Spiced Pumpkin Bread

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a loaf pan by greasing it with oil or butter.
  3. Mix together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger in a medium bowl.
  4. Combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl.
  5. Combine the dry ingredients with the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
