Instructions

  1. Activate the yeast: In a small bowl, mix the warm water and yeast and let it sit for 5-10 minutes until frothy.
  2. Mix the dry ingredients: In a large bowl, combine the bread flour and salt.
  3. Combine wet and dry ingredients: Add the frothy yeast to the flour mixture along with olive oil; stir to combine.
  4. Incorporate the olives and herbs: Fold in the chopped olives, rosemary, and thyme.
  5. Knead the dough: Turn out onto a floured surface and knead for 8-10 minutes until smooth.
  6. The first rise: Shape into a ball, place in a greased bowl, cover, and let rise for 1 hour.

  8. The second rise: Place on a parchment-lined baking sheet, cover, and let rise for 30-45 minutes.
