Flavorful Portuguese Peri Peri Chicken

Juicy and flavorful grilled peri peri chicken, marinated to perfection for a spicy and zesty meal.

  • 2 pounds (900g) chicken thighs, bone-in, skin-on
  • ⅓ cup (80ml) peri peri sauce
  • 4 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Optional: cayenne pepper or fresh chili to taste

Instructions

  1. Combine the peri peri sauce, minced garlic, smoked paprika, lemon juice, olive oil, salt, and pepper in a large bowl. Whisk until smooth.
  2. Place the chicken thighs in the marinade, ensuring they are well-coated. Cover and let marinate for at least 30 minutes in the fridge.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and shake off excess. Place chicken thighs skin side down on the grill.
  5. Sear for about 5-7 minutes until the skin is crispy and golden brown.
  6. Flip the chicken and continue grilling for another 10-15 minutes until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the grill and let it rest for about 5 minutes before serving.

Notes

For maximum flavor, marinate the chicken for a few hours or overnight. You can serve with a fresh salad, grilled veggies, or rice.
