Blueberry Muffins with Lemon Glaze

Delicious blueberry muffins topped with a zesty lemon glaze, perfect for breakfast or dessert.

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • Zest of 1 lemon
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by lining it with paper liners.
  3. Mix the dry ingredients: whisk together flour, sugar, baking powder, baking soda, and salt.
  4. Combine the wet ingredients: melt the butter, then mix in eggs, buttermilk, vanilla extract, and lemon zest.
  5. Combine the wet and dry ingredients until just mixed.
  6. Add the blueberries gently to the batter.
  7. Fill each muffin cup about two-thirds full with batter.
  8. Bake for 18-22 minutes until a toothpick comes out clean.
  9. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.
  10. Glaze with a mixture of powdered sugar and lemon juice.

Notes

For a vegan version, substitute eggs with unsweetened applesauce and butter with coconut oil.
