  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup Dutch-processed cocoa powder, sifted
  • 8 oz cream cheese, full-fat, room temperature
  • 2 oz dark chocolate, chopped for ganache
  • 1/4 cup mini semi-sweet chocolate chips, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking dish lined with parchment paper.
  3. Mix the melted butter and granulated sugar until combined.
  4. Add the sifted cocoa powder and mix until smooth.
  5. Incorporate the eggs one by one, whisking until combined.
  6. Fold in the flour until just mixed.
  7. Pour the brownie batter into the pan and bake for 20-25 minutes.
  8. Prepare the cheesecake layer by beating the cream cheese until smooth, then adding sugar until fluffy.
  9. Spread the cheesecake mixture over the cooled brownie layer.
  10. Chill in the fridge for at least 2 hours.
  11. Finish by melting dark chocolate and drizzling it over the cheesecake, then sprinkle with mini chocolate chips.
  12. Slice into squares and serve chilled.
