  • 1/2 cup Powdered Sugar
  • 1 cup Heavy Cream
  • 1 teaspoon Vanilla Extract
  • 2 cups Fresh Strawberries
  • 1 tablespoon Granulated Sugar
  • 2 tablespoons Butter
  • Powdered Sugar for Dusting (optional)

Instructions

  1. Prepare the Waffles: If you’re making homemade waffles, whip those up first! Follow your favorite waffle recipe or use a trusty store-bought mix. Preheat your waffle iron as you mix the batter. If using frozen waffles, pop them in the toaster to achieve that golden crispiness.
  2. Make the Cheesecake Filling: In a mixing bowl, combine the cream cheese and powdered sugar. Beat on medium speed until creamy and smooth. If your cream cheese is too stiff, pop it in the microwave for 10-15 seconds to soften it up before mixing!
  3. Add the Whipped Cream: In another bowl, whip the heavy cream (or coconut whipped cream) until soft peaks form. Gently fold this whipped cream into the cream cheese mixture.
  4. Toss the Strawberries: If your strawberries need a little sweetness booster, slice them up, toss them in 1 tablespoon of granulated sugar, and let them sit for a few mins.
  5. Assemble the Waffles: Place one waffle on a plate. Spread a generous spoonful of that heavenly cheesecake mixture on top, sprinkle those juicy strawberries on, and cover with another waffle.
  6. Brush and Grill: Heat a non-stick skillet over medium heat and brush it lightly with melted butter. Place the stuffed waffle in the skillet, add pressure with a spatula, and let it cook for 2-3 minutes.
