Creamy Butternut Squash Soup

A cozy and flavorful butternut squash soup with a touch of sage, perfect for autumn.

  • 1 Butternut Squash, peeled, seeded, and cubed
  • 1 Onion, finely chopped
  • 4 cups Broth (chicken or vegetable)
  • 1 cup Cream (or coconut milk for dairy-free)
  • 1 teaspoon Fresh Sage, finely chopped (or 1/3 teaspoon dried)

Instructions

  1. Prep your ingredients: Peel, seed, and chop the butternut squash into 1-inch cubes.
  2. Chop the onion finely for a smoother texture.
  3. Saute the onion in olive oil over medium heat for 5-7 minutes until soft.
  4. Add the cubed butternut squash and cook for another 5 minutes.
  5. Pour in the broth until it just covers the squash. Bring to a boil then simmer for 20-25 minutes.
  6. Blend the soup until smooth using an immersion blender or in batches with a standing blender.
  7. Add cream and sage, season to taste, and let simmer for another 5 minutes.
  8. Serve hot in bowls with optional toppings like toasted pumpkin seeds.

Notes

For a fragrant twist, add a dash of nutmeg or cinnamon. Adjust seasoning while tasting throughout the cooking process.
