Chicken and Gnocchi Soup

A warm and hearty bowl of creamy chicken and gnocchi soup, perfect for chilly days.

Ingredients

  • 2 cups shredded chicken
  • 1 package gnocchi
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup spinach
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Sauté the garlic in olive oil over medium heat until fragrant.
  2. Add the diced carrots and celery, sauté until softened.
  3. Pour in the chicken broth and bring to a simmer.
  4. Toss in the gnocchi and chicken, cooking until the gnocchi floats.
  5. Add the heavy cream and spinach, stirring until combined.
  6. Season with Italian seasoning, salt, and pepper to taste.

Notes

Garnish with fresh parsley or grated parmesan cheese. Serve with crusty sourdough bread.
