  • 500g potatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 220°C (428°F).
  2. Prepare the chicken thighs by rinsing under cold water and patting them dry.
  3. Season the chicken with olive oil, salt, pepper, garlic powder, and paprika.
  4. Chop the potatoes into bite-sized pieces and toss with olive oil, salt, and pepper.
  5. Combine the seasoned potatoes around the chicken on the baking tray.
  6. Roast for about 35–40 minutes until the chicken is cooked through and potatoes are golden.
  7. Crisp the chicken skin by broiling for the last 3-5 minutes if desired.
  8. Let the dish rest for 5 minutes before serving.
  9. Garnish with fresh herbs and serve.
