Chinese Chicken Coleslaw

A refreshing and flavorful coleslaw packed with chicken and crunchy vegetables, perfect for a light meal or summer gathering.

  • 1/2 cup rice vinegar
  • 1/4 cup olive or sesame oil
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sesame seeds, divided
  • 2 14-ounce bags shredded coleslaw mix
  • 2 to 3 small chicken breasts, cooked and shredded
  • Kosher salt and freshly cracked black pepper, to taste

Instructions

  1. Prepare the chicken: Season your chicken breasts with salt and pepper, grill or bake until cooked through (20-25 minutes at 375°F), then shred.
  2. Make the dressing: Whisk together rice vinegar, olive or sesame oil, soy sauce, and mirin in a small bowl.
  3. Get the coleslaw mix ready: In a large bowl, combine the shredded coleslaw mix.
  4. Combine chicken and dressing: Toss shredded chicken with coleslaw mix, then drizzle dressing over and mix gently.
  5. Sprinkle the sesame seeds on top and mix again.
  6. Taste test: Adjust seasoning with salt, pepper, or more dressing as needed.

Notes

Feel free to experiment with variations like adding fruits or using tofu instead of chicken.
