  1. Prepare Your Ingredients: Start by gathering and prepping your ingredients. Chop the onion, slice the carrots and celery, and mince the garlic.
  2. Sauté the Aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion, celery, and carrots. Sauté for about 5 minutes until they’re tender and the onion is translucent.
  3. Add Garlic and Herbs: Toss in the minced garlic, oregano, and basil. Stir everything for about 30 seconds until fragrant.
  4. Introducing the Chicken: Add the boneless chicken breasts to the pot, followed by the diced tomatoes and chicken broth. Stir gently to combine.
  5. Simmer the Soup: Increase the heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered for about 20-25 minutes.
