Copycat Panera Broccoli Cheddar Soup

A comforting and creamy broccoli cheddar soup inspired by Panera Bread, perfect for chilly days.

  • 1 cup chopped broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup diced onion
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups vegetable or chicken broth
  • 2 cups half-and-half
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Sauté the veggies: In a large pot over medium heat, melt your 1/2 cup of butter. Add the 1/2 cup of diced onion and cook until they’re translucent, about 3-5 minutes.
  2. Add the broccoli and carrots: Toss in the 1 cup of chopped broccoli florets and 1 cup of shredded carrots. Stir well and let them cook for another 5-7 minutes.
  3. Create your roux: Sprinkle in 1/2 cup of all-purpose flour, stirring constantly for about 2 minutes.
  4. Pour in the broth: Gradually add 4 cups of vegetable or chicken broth while continuing to stir. Increase the heat to bring it to a simmer and let it bubble away for about 10 minutes.
  5. Incorporate half-and-half: After the broth has simmered, stir in 2 cups of half-and-half and allow it to heat through for about 5 minutes.
  6. Melt in the cheese: Stir in 2 cups of shredded sharp cheddar cheese until it melts into the soup. Season with salt and pepper to taste.
  7. Serve and enjoy: Ladle the warm soup into bowls and finish with a sprinkle of extra cheese or fresh herbs.

Notes

Serve with crusty bread or a green salad for a complete meal. To customize, add red pepper flakes for spice or swap different cheeses.
