Cottage Cheese Banana Bread Mug Cake

A quick and healthy mug cake that captures the nostalgic flavors of banana bread, packed with protein and moisture from cottage cheese.

  • 1/2 ripe banana, mashed
  • 1 large egg
  • 1 tbsp almond flour (or oat flour)
  • 1/2 tsp vanilla extract

  • Pinch of salt
  • 1 tsp maple syrup or honey (optional)
  • Chopped walnuts (optional)
  • Dark chocolate chips (optional)

Instructions

  1. Add 1/4 cup of cottage cheese to a microwave-safe mug.
  2. Mash the 1/2 ripe banana right into the mug with the cottage cheese.
  3. Crack your large egg into the mug and whisk it all together.
  4. Sprinkle in the almond flour, vanilla extract, cinnamon, baking powder, and a pinch of salt.
  5. Add the optional teaspoon of maple syrup or honey and any add-ins like walnuts or chocolate chips.
  6. Pop your mug in the microwave and cook for 1 minute and 30 seconds to 2 minutes.
  7. Remove carefully from the microwave and let cool for a minute or two before enjoying.
