Cowboy Caviar

A flavorful and vibrant salad/dip featuring fresh veggies, beans, and a zesty dressing, perfect for gatherings.

Ingredients

  • ⅓ cup Olive oil (virgin)
  • ⅓ cup White or red wine vinegar
  • 1 teaspoon Garlic powder or one garlic clove minced
  • 1 teaspoon chili powder
  • ½ Lime (Juice of ½ of a lime)
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 5 each Roma tomatoes, seeded and diced
  • 15-ounce can black-eyed peas, drained and rinsed
  • 15-ounce can black beans, drained and rinsed
  • 11-ounce can corn, drained
  • 1 red onion, diced
  • 1 red pepper, diced
  • ½ green pepper, diced
  • 1 cup Fresh cilantro, chopped
  • 1 bunch Green onions

Instructions

  1. Start by whisking together the olive oil, vinegar, garlic, chili powder, lime juice, sugar, and salt in a bowl. Taste it for balance.
  2. Dice the Roma tomatoes, red and green peppers, and onion into uniform sizes.
  3. Add the black-eyed peas, black beans, and corn into a large mixing bowl. Rinse the beans thoroughly beforehand.
  4. Toss in your chopped tomatoes, peppers, onions, and cilantro. Stir well.
  5. Drizzle the prepared dressing over your mixture and fold gently.
  6. Cover the bowl and let your Cowboy Caviar chill in the fridge for at least 30 minutes.
  7. Before serving, give it another gentle toss to redistribute any settled ingredients.

Notes

Cowboy Caviar can be made a day ahead and stored in an airtight container. Feel free to customize with additional ingredients like avocado or mango.
