Cowboy Soup

A hearty and flavorful soup combining ground beef, beans, and fresh vegetables, perfect for cozy gatherings.

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. Brown the ground beef in a large pot over medium heat for about 5-7 minutes.
  2. Add chopped onion and minced garlic, sautéing for another 3-4 minutes.
  3. Incorporate the black beans, kidney beans, and corn, letting them mingle for a couple of minutes.
  4. Add the diced tomatoes and beef broth, bringing everything to a gentle simmer.
  5. Stir in chili powder, cumin, salt, and pepper, allowing the soup to simmer for at least 20 minutes.
  6. Turn off the heat and let the soup sit for a few minutes before serving.
  7. Ladle into bowls and top with cheese, sour cream, and green onions.
