Cozy Apple Stuffed Acorn Squash

  • 2 tablespoons Olive Oil
  • 2 tablespoons Unsalted Butter
  • 2 cups Apples (Gala or Fuji)
  • 1/2 cup Walnuts
  • 1/2 cup Dried Cranberries
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Maple Syrup
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the acorn squash by cutting it in half lengthwise and scooping out the seeds.
  3. Roast the squash cut-side down on a baking sheet for 25-30 minutes until tender.
  4. Make the filling by melting butter and sautéing apples, walnuts, cranberries, and spices in a skillet for about 5-7 minutes.
  5. Stuff the squash with the filling, mounding it slightly.
  6. Drizzle with maple syrup and bake for an additional 10-15 minutes until heated through.
  7. Serve warm, garnished with cranberries or walnuts if desired.

Feel free to prepare the squash and filling ahead of time. This dish can be customized with different nuts or spices.
