  • 1 tablespoon granulated sugar
  • 2 tablespoons cilantro (finely chopped, optional)

Instructions

  1. Prep your ingredients by chopping up the garlic, shallot, and bird’s eye chilis.
  2. Mix the base by combining the chopped garlic, shallot, and chilis in a medium-sized bowl.
  3. Add the umami by pouring in the fish sauce and stirring it into the mixture.
  4. Squeeze one lime’s juice into the bowl, mixing until well combined.
  5. Sweeten the deal with the tablespoon of granulated sugar, stirring until fully dissolved.
  6. Finish with cilantro, adding it at the end and giving everything another mix.
  7. Taste and adjust flavors as needed, making sure it’s perfectly balanced.
  8. Let it sit for at least 30 minutes before serving to enhance the flavors.
