Cranberry Orange Bread

A warm and cozy loaf bursting with tart cranberries and vibrant orange zest, perfect for breakfast or as a thoughtful gift.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 1 orange
  • 1 cup fresh cranberries (or frozen, thawed and drained)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking powder, and salt in a large bowl.
  3. Cream the butter and sugar in another bowl until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the orange zest.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. Fold in the cranberries gently.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 55-65 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

For a nutty twist, add chopped walnuts or pecans. For a chocolatey variation, swirl in dark chocolate chips.
