Cranberry Walnut Bread

A festive and cozy bread combining the tartness of cranberries with the crunch of walnuts, perfect for holiday gatherings.

  • 2 cups all-purpose flour
  • 1 cup cranberries, fresh or dried
  • 1 cup walnuts, chopped
  • 1 cup milk (or dairy-free alternative)
  • 1/2 cup sugar (or brown sugar)
  • 1/4 cup butter, melted (or coconut oil)
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a loaf pan by greasing it with butter or cooking spray.
  3. Mix the dry ingredients: whisk together flour, baking powder, sugar, and salt in a medium bowl.
  4. Toss the cranberries and walnuts with a tablespoon of the dry mixture to prevent them from sinking.
  5. Beat the eggs in a large bowl, then mix in the milk, melted butter, and orange zest.
  6. Incorporate the dry mixture into the wet ingredients gradually.
  7. Fold in the cranberries and walnuts gently.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a vegan option, use flax eggs or applesauce instead of eggs. You can also freeze the bread for up to 3 months.
