The Ultimate Pumpkin Bread with Cream Cheese

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup cream cheese, softened
  • 1/4 cup granulated sugar (for cream cheese filling)
  • 1/2 tsp vanilla extract (for cream cheese filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients in a medium bowl: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. Blend wet ingredients in a large bowl: pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs.
  4. Combine dry mixtures into wet mixtures, folding gently until no lumps remain.
  5. Prepare cream cheese filling by blending cream cheese, 1/4 cup sugar, and vanilla extract until smooth.
  6. Assemble the bread by pouring half the batter into a greased loaf pan, dolloping cream cheese mixture, then covering with remaining batter.
  7. Bake in the preheated oven for 60–70 minutes until a toothpick comes out clean.
  8. Cool in the pan for about 10 minutes before moving to a cooling rack.

Notes

Feel free to experiment with variations, such as adding chocolate chips or nuts. Ensure cream cheese is fully softened for better swirling.
