Ultimate Canadian Cheese Soup

A warm and comforting Canadian cheese soup filled with rich flavors, perfect for chilly nights.

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 medium carrot (diced small)
  • 1 celery stalk (diced small)
  • 3 tbsp all-purpose flour
  • 3 cups chicken broth (or vegetable broth)
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese (freshly shredded)
  • ½ cup mild cheddar or Gruyère (optional)
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika (optional)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Pinch of cayenne pepper (optional)
  • 1 small potato (peeled and diced)
  • ½ cup cooked ham or crispy bacon bits (optional)
  • Chopped chives for garnish

Instructions

  1. Melt the butter and olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cooking for another minute.
  4. Add the diced carrot and celery, stirring for about 5-7 minutes until softened.
  5. Sprinkle in the flour and stir for about 2 minutes to create a roux.
  6. Pour in the chicken broth gradually, stirring to avoid lumps, and bring to a gentle simmer.
  7. Add the whole milk and heavy cream, simmering for 5 minutes.
  8. Stir in the shredded cheddar cheese until melted.
  9. Season with Dijon mustard, smoked paprika, salt, black pepper, and cayenne if using.
  10. Fold in the diced potato and optional ham or bacon, simmering for 15-20 minutes until tender.
  11. Serve in bowls and garnish with chives.
