Canadian Cheese Soup

A soul-warming, creamy Canadian Cheese Soup featuring rich flavors and the goodness of cheese.

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 medium carrot (diced small)
  • 1 celery stalk (diced small)
  • 3 tbsp all-purpose flour
  • 3 cups chicken broth (or vegetable broth)
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese (freshly shredded)
  • ½ cup mild cheddar or Gruyère (optional)
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika (optional)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Pinch of cayenne pepper (optional)
  • 1 small potato (peeled and diced)
  • ½ cup cooked ham or crispy bacon bits (optional)
  • Chopped chives for garnish

Instructions

  1. Melt the butter and oil in a large pot over medium heat.
  2. Sauté the onions and garlic until translucent.
  3. Add the diced carrot and celery and sauté for about 5 minutes.
  4. Thicken with flour, stirring for about a minute.
  5. Pour in the broth gradually and bring to a simmer.
  6. Stir in the milk and cream until well mixed.
  7. Add the cheese and stir until melted.
  8. Spice it up with mustard, paprika, salt, and pepper.
  9. Fold in the potato and ham or bacon bits.
  10. Simmer again for 10-15 minutes until the potatoes are tender.
  11. Garnish with chopped chives and serve hot.

Notes

For a lighter version, substitute some cheese for lower-fat options or use gluten-free flour if necessary.
