  • 1 lb chicken breast, cooked and shredded
  • 1 cup rice (white or brown)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prep the chicken by cooking and shredding it if not already done.
  2. Sauté the diced onion, carrots, and celery in olive oil for 5-7 minutes until softened.
  3. Add the minced garlic and rice, stirring for another minute.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Let the soup bubble gently for 15-20 minutes until the rice is cooked.
  6. Stir in the heavy cream until well combined.
  7. Add the shredded chicken and season with salt and pepper.
  8. Serve in bowls and garnish with fresh parsley.
