Creamy Chicken Soup

Ingredients

  • Chicken: 2 lbs boneless, skinless chicken thighs or breasts
  • Vegetables: 2 carrots, diced; 2 stalks celery, diced; 1 onion, diced
  • Cream: 1 cup heavy cream (or half-and-half, coconut cream)
  • Broth: 6 cups low-sodium chicken broth
  • Herbs: Fresh thyme and parsley
  • Garlic: 2 cloves, minced
  • Spices: Black pepper, salt, paprika, and lemon juice

Instructions

  1. Sauté the vegetables: In a large pot, heat about 2 tablespoons of olive oil over medium heat. Add your diced onion, chopped carrots, and celery. Sauté for about 5-7 minutes until the vegetables start to soften.
  2. Add the chicken: Toss in your chicken. Season with salt and pepper. Brown the chicken on each side for about 4-5 minutes.
  3. Stir in the garlic and herbs: Add the minced garlic, chopped fresh thyme, and parsley to the pot. Sauté for an additional minute.
  4. Pour in the broth: Add about 6 cups of your chosen broth. Bring to a gentle boil, then reduce the heat to low and let it simmer for 15-20 minutes until the chicken is cooked through.
  5. Shred the chicken: Remove it from the pot and shred it using two forks. Return the shredded chicken back into the pot.
  6. Creamy magic: Pour in 1 cup of heavy cream. Stir well to combine and allow it to warm through for another 5 minutes.
  7. Final touches: Just before serving, squeeze a little lemon juice for a bright finish.
