Jalapeno Popper Soup

A comforting and creamy soup that captures the classic flavors of jalapeno poppers in a warm and hearty dish.

  • 2 cups chopped jalapenos
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Sauté the onions and garlic by adding olive oil in a large pot over medium heat. Add diced onions, sauté for about 5 minutes, then add minced garlic and sauté for an additional 1-2 minutes.
  2. Add the jalapeños and cook for about 3-4 minutes until softened.
  3. Introduce the shredded chicken, pour in the chicken broth, and bring to a gentle simmer for about 10 minutes.
  4. Add cream cheese in cubes, stirring until it melts into the soup.
  5. Finish with shredded cheddar cheese, corn, cumin, salt, and pepper, simmering for another 5 minutes.
  6. Serve the soup in bowls, garnished with fresh cilantro and a squeeze of lime, if desired.

Notes

For a richer flavor, consider adding pre-cooked bacon or experimenting with different cheese varieties. This soup can be frozen for up to 3 months.
