Homemade Roasted Tomato Soup

A comforting and delicious roasted tomato soup that warms the soul with every sip.

Ingredients

  • Fresh tomatoes (Roma or vine-ripened)
  • 1 sweet onion (yellow or Vidalia)
  • 34 cloves of garlic
  • 1/2 cup cream (or coconut milk for dairy-free)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 tbsp olive oil
  • Basil (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and prep the ingredients by slicing the tomatoes in half.
  2. Chop the onion into quarters and smash the garlic cloves, leaving the skins on. Place everything on a baking sheet and drizzle with olive oil, salt, and pepper.
  3. Roast in the oven for about 30-40 minutes until golden brown.
  4. Transfer the roasted mixture to a blender, add cream, and blend until smooth.
  5. Return the blended mixture to a pot, season with more salt, pepper, and fresh basil, then simmer for a few minutes.

Notes

This soup can be made in advance and actually tastes better the next day. Pair with crusty bread or grilled cheese.
