Creamy Strawberry Popsicle

A vibrant and refreshing creamy strawberry popsicle that brings joy to summer days.

  • 16 oz Frozen Strawberries
  • 1/3 Cup Granulated Sugar
  • 2 Tbsp Water
  • 1/2 oz Freeze-Dried Strawberries
  • 1/4 Cup Heavy Cream

Instructions

  1. Blend the strawberries: Start by taking your frozen strawberries and tossing them into a blender. Add in the granulated sugar and 2 tablespoons of water. Blend this until smooth. You want it to be a rich, thick puree. If you find it too thick, don’t be shy—add a splash more water.
  2. Incorporate the heavy cream: Now, pour in the heavy cream. Blend again until everything is combined, creating a luscious, creamy mixture.
  3. Add freeze-dried strawberries: Crush up your freeze-dried strawberries into smaller pieces and stir these into your strawberry mixture.
  4. Pour into molds: Carefully pour the mixture into your popsicle molds. Leave a little room for expansion as they freeze.
  5. Freeze and set: Pop those molds into the freezer and let them freeze for at least 240-360 minutes, or until completely solid.
  6. Unmold and enjoy: Run warm water over the outside of the molds for about 10 seconds, then carefully pull them out.

Notes

For a fun twist, consider layering the puree and cream mixture or incorporating fresh herbs or other fruits.
