Honey Roasted Carrots with Feta

A sweet and savory side dish that features honey caramelized carrots topped with crumbled feta.

Ingredients

  • 1 pound carrots, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill or 1 tablespoon fresh dill, chopped
  • 1/2 cup feta cheese, crumbled
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the carrots, cutting them into uniform 1-inch pieces.
  3. Combine the olive oil, honey, minced garlic, salt, pepper, and dill in a mixing bowl.
  4. Toss the carrots in the honey-garlic mixture until evenly coated.
  5. Spread the carrots on a baking sheet lined with parchment paper.
  6. Roast for about 25-30 minutes, flipping halfway through until caramelized.
  7. Sprinkle feta cheese over the carrots immediately after removing from the oven.
  8. Serve warm, optionally garnishing with extra dill.

Notes

For a vegan option, substitute honey with maple syrup. You can use avocado oil instead of olive oil if preferred.
