  • 1 cup all-purpose flour

  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1/4 cup chopped fresh herbs (optional)
  • Vegetable oil, for frying

Instructions

  1. Prep the squash: Start by washing your yellow squashes thoroughly, trim the ends, and grate them finely.
  2. Drain excess moisture by placing the grated squash in a kitchen towel and squeezing out the water.
  3. Mix dry ingredients: In a large bowl, combine flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. Whisk the eggs in a separate bowl and then pour them into the dry mixture, mixing until combined.
  5. Fold in the grated squash and herbs into the batter, adjusting moisture with egg if needed.
  6. Heat the oil in a skillet over medium-high heat before frying.
  7. Fry the fritters for 3-4 minutes on each side until golden brown and crispy.
  8. Drain excess oil on a paper towel-lined plate and serve warm.
