Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Prepare the zucchini: Grate the zucchini and squeeze out excess moisture.
  3. Mix the ingredients: In a large bowl, combine the grated zucchini, minced garlic, grated Parmesan cheese, egg, breadcrumbs, chopped parsley, salt, and black pepper; mix well.
  4. Shape the bites: Form the mixture into small patties or balls (1-2 inches).
  5. Place on a baking sheet: Line a baking sheet with parchment paper and arrange the zucchini bites.
  6. Bake: Bake for about 20-25 minutes, flipping halfway through.
