Strawberry Oatmeal Bars with Crumble Topping

  • 2 cups rolled oats
  • 1 cup flour
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab your favorite 9×13-inch baking dish and line it with parchment paper.
  3. In a large mixing bowl, combine your rolled oats, flour, brown sugar, baking soda, and salt.
  4. Melt your butter and add it to the dry mixture, stirring until combined.
  5. Take about three-quarters of the mix and press it into the bottom of your prepared baking dish.
  6. In a separate bowl, mix your chopped strawberries, sugar, and lemon juice, letting it sit for 10 minutes.
  7. Pour the strawberry mixture over the pressed oat base, spreading it evenly.
  8. Crumble the remaining oat mixture over the top and bake for 25-30 minutes.
  9. Let the bars cool in the dish for about 10 minutes before slicing.

Notes

For a nutty version, add 1/2 cup chopped nuts. These bars freeze beautifully!
