Detox Moroccan Lentil Soup

A hearty and vibrant soup featuring the rich spices of Moroccan cuisine and the wholesome goodness of lentils.

  • 1 cup green or brown lentils, rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the chopped onion for about 4-5 minutes until soft and translucent.
  3. Add the minced garlic and sauté for another minute.
  4. Stir in the diced carrot and celery, cooking for an additional 3-4 minutes.
  5. Sprinkle in the cumin, coriander, turmeric, and paprika, and stir for about 30 seconds.
  6. Combine the rinsed lentils and diced tomatoes into the pot and stir.
  7. Pour in the vegetable broth and stir everything together. Bring to a gentle boil and then reduce to a simmer.
  8. Season with salt and pepper once the lentils are cooked through.
  9. Serve the soup in bowls, garnished with fresh cilantro.

Notes

This soup can be enjoyed with crusty bread or a light salad. You can also add a can of coconut milk for a creamy version or cooked chicken for added protein.
