Easy Sweet Juicy Baked Peaches with Homemade Vanilla Mascarpone

  • 4 large fresh peaches (ripe but firm)
  • 2 tablespoons brown sugar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • Fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the peaches thoroughly, cut them in half, and remove the pit.
  3. In a small bowl, whisk together the brown sugar, melted butter, and lemon juice until combined.
  4. Drizzle the brown sugar mixture over each peach half.
  5. Pop your baking dish in the oven and bake for about 20-25 minutes.
  6. In a medium bowl, combine the mascarpone cheese, vanilla extract, and powdered sugar, blending until smooth.
  7. For added flavor, mix in ground cinnamon with your mascarpone.
  8. Once the peaches are done, plate them and serve with a dollop of the vanilla mascarpone.
  9. Garnish with fresh mint leaves for a pop of color.
