Black Raspberry Crumble Bars

Delightful Black Raspberry Crumble Bars that combine sweet-tart black raspberries with a buttery crumble.

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 2 cups fresh or frozen black raspberries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×9-inch baking dish with parchment paper or grease with butter.
  3. Mix the all-purpose flour, rolled oats, brown sugar, and salt in a large mixing bowl.
  4. Add the melted unsalted butter into the dry ingredients and mix until it resembles coarse crumbs.
  5. Set aside 1 cup of the crumble mixture for topping later.
  6. Prepare the filling by combining black raspberries, granulated sugar, cornstarch, and lemon juice in a medium bowl.
  7. Assemble the bars by pressing the remaining crumble mixture into the bottom of the baking dish, then pour the raspberry filling over it.
  8. Sprinkle the reserved crumble mixture on top of the berries.
  9. Bake for 30-35 minutes until golden brown and bubbly.
  10. Cool in the pan for 10-15 minutes, then chill in the fridge for at least an hour before slicing.
  11. Serve the bars as is or dust with powdered sugar, optionally accompanied by ice cream.

Notes

Add chopped nuts to the crumble for extra texture. Adjust sugar based on sweetness preference.
