The Ultimate Lemon Blueberry Bread

A delightful lemon blueberry bread that captures the brightness of lemons and the sweetness of blueberries, perfect for breakfast or as a dessert.

  • 2 cups all-purpose flour
  • 1 cup fresh blueberries (or frozen)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/2 cup milk
  • 1 large lemon (zest and juice)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5 inch loaf pan by greasing it with butter or lining it with parchment paper.
  3. Mix the dry ingredients: in a bowl, whisk together the flour, baking powder, and salt.
  4. Combine the wet ingredients: in a separate large bowl, beat together the sugar and butter until light and fluffy, then add the eggs, milk, and lemon juice and zest.
  5. Incorporate the dry ingredients into the wet ingredients until just combined.
  6. Fold in the blueberries gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55–65 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve with butter or enjoy plain.

Notes

For added flavor, consider substituting half of the sugar with brown sugar or adding poppy seeds. This bread tastes even better after a day or two.
